It's easy to find in most grocery stores, usually in the international or refrigerated section. Soft tofu is also a good option, but using firmer tofu, like firm or extra-firm, will make the mousse lumpy. Stick with silken tofu for that perfect, smooth consistency.
  • Dark Chocolate: I recommend dairy-free 70% dark chocolate, but you can substitute it with dairy-free chocolate chips. Ideally, use high-quality chocolate and make sure it's vegan.
  • Granulated Sugar: I like to use granulated sugar for a classic sweetness, but you can also try brown sugar, maple syrup, agave, or other sweeteners. Just keep in mind that if you use a liquid sweetener like maple syrup or agave, the mousse may turn out a bit softer and less dense. Also, check that your sugar is vegan, as some may be processed with non-vegan ingredients.

How to make tofu chocolate mousse
