This Vegan Caesar Salad is a plant-based take on the classic that I make whenever I want something fresh, crunchy, and full of flavor. It comes together in just 15 minutes with crisp romaine lettuce, crunchy croutons, vegan Parmesan, and creamy Caesar dressing.

Traditional Caesar salad is not vegan because the dressing usually contains anchovies and egg, and the salad is topped with Parmesan cheese. For this version, I use my Vegan Caesar Dressing and vegan Parmesan, so you still get that creamy, tangy, savory flavor without any animal-based ingredients.

It works well as a light lunch or a side dish, and you can add tofu, chickpeas, or vegan chicken to make it more filling. The dressing and croutons can be prepared ahead of time, but keep everything separate and toss the salad just before serving so the lettuce stays crisp.

  • Vegan Caesar dressing: I use my homemade Vegan Caesar Dressing, made with Vegan Mayonnaise, nutritional yeast, lemon juice, capers, Dijon mustard, and Vegan Worcestershire Sauce. Store-bought vegan Caesar dressing also works when you need a quicker option.

  • Cut the lettuce into bite-sized pieces: Pieces that are easy to eat make the salad more comfortable to serve and help distribute the dressing evenly.

How to Store Leftovers

  • Fridge: For the best texture, store the lettuce, croutons, vegan Parmesan, and dressing separately. The washed and dried lettuce will keep for 2 to 3 days, the dressing for up to 5 days, and the vegan Parmesan and croutons according to their package instructions. If the salad is already assembled, store it in an airtight container and eat it within 1 day, as the lettuce and croutons will soften.
  • Freezer: Do not freeze the assembled salad, as the lettuce will become watery and lose its texture. The dressing can be frozen separately, although its texture may change after thawing.

Vegan Caesar Salad

This quick and easy Vegan Caesar Salad combines crisp romaine, crunchy croutons, vegan Parmesan, and creamy Caesar dressing.

  • 8 cups romaine lettuce, washed and cut into bite-sized pieces
  • 2 cups vegan croutons
  • ½ cup vegan shredded cheese, ideally Parmesan-style, but any type will work
  • 1 batch vegan Caesar dressing, or 1½ cups (360 ml) store-bought vegan Caesar dressing
