In summer I usually eat quick and simple dishes and lots of fruits and fresh vegetables, that's why I love salads, they are really easy to make, like this refreshing vegan Greek salad with homemade vegan feta cheese.

It's important to eat a balanced diet, with many fruits and veggies, it's fun, good for your health and you never get bored. If you don't like salads, you should try new recipes with ingredients you like, salads are very healthy, nutritious and they can help you to lose or maintain weight.

Sometimes it's hard to find a vegan salad when we eat out, they usually are made with cheese or other animal ingredients like bacon, chicken or tuna. These ingredients are not very healthy and they are high in fat, so you can try other ingredients like this tofu feta cheese, it's healthier, lighter and cruelty-free.

The traditional Greek salad is made with tomatoes, cucumber, green pepper, red onion, olives and feta cheese, typically seasoned with salt, black pepper, oregano and extra virgin olive oil.

You can also add capers, lemon juice or vinegar. Remove the black olives and the olive oil for a lighter version.

Be careful with salad dressings, they can ruin your salads. Sometimes they are very unhealthy and full of fat. Avoid saturated fats and eat healthy plant based fats. You need to eat fat, but choose the good ones and eat them in moderation. I hope you like this vegan Greek salad, it's ready in 10 minutes, so you can eat healthy even if you don't have much time.

Vegan Greek Salad

This refreshing vegan Greek salad with homemade vegan tofu feta cheese is healthy, light, nutritious and so delicious!

Ingredients  

  • ½ red onion
  • 1 cucumber
  • 1 green pepper
  • 4 tomatoes
  • Vegan Feta cheese
  • 40 black olives
  • 1 tablespoon oregano
  • Extra virgin olive oil
  • Salt and pepper to taste, optional

Instructions 

  • Toss all ingredients together with desired amount of extra virgin olive oil, salt and pepper, until well mixed.

    This was delicious, and so easy to prepare. One of the best Greek salads I’ve ever had, vegan or not.

    You don’t miss the feta with the tofu version. I think it gives it a nice, lighter, healthier touch than the dairy alternative.

    I’ve prepared this a few times now. I usually just add a squeeze of lemon, but otherwise leave it as it is.

    I’d give it 5 stars but it doesn’t seem to have that option available here?

    Delicious, the tofu turned out great, I added miso and nutritional yeast to the marinade. I also added roasted squash to the Greek salad , I loved it and am having again tomorrow. Thankyou

    This was just delicious!!! Great recipe. I have always been shy about eating cold tofu (I'm a cook it all kind of gal)... but this was truly fantastic. The flavor was fabulous.

    I added chopped up avocado to the salad when I served it and also added Red Wine Vinegar to taste. Yum. Thanks again.
