  • Vegan mayo: I like to use my Homemade Vegan Mayo recipe, but you can use any mayo, whether homemade or store-bought, depending on what you have on hand. If you can’t or don’t want to use mayo, try my Vegan Chipotle Sauce recipe instead. It’s similar and made with cashews! You could also use plain non-dairy yogurt or silken tofu if you want a lighter version. Both give you that creamy texture similar to mayo.
  • Chipotle peppers in adobo sauce: You can adjust the heat by adding more or fewer chipotles based on how spicy you like your mayo. Since it’s chipotle mayo, chipotle peppers are a must! If you don’t have them, you can use chipotle powder instead. About 2 teaspoons of chipotle powder equals around 2 chipotles, but feel free to adjust to your own spice level.
  • Lime juice: For the freshest flavor, freshly squeezed lime juice is the way to go. If you don’t have fresh limes on hand, bottled lime juice works fine, or you can use lemon juice as an alternative. Just remember, fresh is always better when it comes to flavor!
  • Smoked paprika: Smoked paprika is the best option for this recipe because it adds a rich, smoky flavor that perfectly complements the chipotle mayo. However, if you don’t have it, you can use sweet paprika as a substitute, or even hot paprika if you want to add an extra kick of spice!
  • Ground cumin.
  • Salt.

Storage instructions

Fridge: Store in an airtight container in the fridge for up to 5-7 days.

Freezer: Freezing is not recommended for optimal texture, as it may cause the mayo to separate. However, if you do freeze it, store it in a freezer-safe container for up to 1-2 months. When ready to use, thaw it in the fridge overnight and stir well to help bring it back to a smoother consistency.

Chipotle peppers in adobo sauce are smoked and dried jalapeños soaked in a flavorful, tangy sauce made from tomatoes, vinegar, onions, and spices. They add a smoky, spicy kick to all kinds of dishes and are a key ingredient in Mexican cuisine.

You can typically find them at most grocery stores in the international section or at your local Mexican market. If they're hard to find, you can always grab them online, like on Amazon.

Can I use chipotle powder?

If you can't find chipotle peppers, you can use chipotle powder as a substitute! One chipotle pepper in adobo sauce is roughly equal to about 1 teaspoon of chipotle powder. So for the two chipotles called for in this recipe, around 2 teaspoons of chipotle powder should work well. A good low-fat substitute for vegan mayo in this recipe would be 1 cup (240 ml) of plain non-dairy yogurt or 1 cup (240 g or 8 ounces) of silken tofu. Both provide a creamy texture similar to mayo but with lower fat content.
