Hi! Alberto here again. In case you didn't read the previous post, I'll put you in the picture: Iosune has got a cold and I'm in charge of publishing this week (she made the recipes, not me, so don't worry ?).
I didn't like the idea of writing, it's one thing I was never interested in (I prefer more graphical things like drawing or taking photos). However, I should admit I enjoy doing it now, I think I could get used to it ?. What about you, do you like writing?
Today's recipe is simple, no hassling and you will get an amazing outcome: pancakes! ? In addition, you only need 3 ingredients.

All of the ingredients are pretty common, so you may already have them in your kitchen: banana, oats and oat milk. You only need to blend them and the batter will be ready.

Now you only have to cook the pancakes.

Quick healthy breakfast idea: make your pancakes the day before and re-heat it next morning, then top it with fruit and syrup.

Tips:
- If you haven't oat milk, you can use any other plant milk or water.
- To save time, you can make big batches of pancakes and freeze them.
- If you are in the mood of something savory, you can use this recipe too. Just use add some tomato slices, vegan Parmesan cheese and oregano for topping instead of fruit and syrup.

Can this be made with apple sauce instead of the banana?

Question. I’m planning on going camping. Do you think I would be able to make a large batch of the pancake batter ahead of time and just keep it refrigerated or does the batter have to be made immediately.
Iosune says
Hi Kelly! I guess you could, but you'll probably need to add more liquid before making the pancakes because the batter will be too thick. Hope it helps!

Never made vegan pancakes before and these turned out perfect. I did add a little cinnamon and a dollop of peanut butter to the mix though, served them with strawberries, blueberries and honey...my children and myself loved them!

how long can they be frozen for and would you reheat on the pan ?
Iosune says
Hi Lauren! About 3 months or even more. You can defrost them in the microwave or at room temperature and then reheat them on the pan 🙂
Monique Jackson says
I have old fashioned oats, is this the same? Or should I use the quick oats or rolled oats? Thank you for your amazing recipes BTW, you guys are amazing!
Cheers!
Iosune says
Hi Monique! I've never used it myself, but I think it should work 🙂
Monique Jackson says
How much do I need to use of apple sauce if I sub the apple sauce for banana? I'm allergic to banana. Sad story for a plant-based eater!
Iosune says
Hi Monique! About 1/2 cup of applesauce (8 tbsp) 🙂

Yummy, simple and healthy! I am not a great cook so I struggled with getting the pancakes to turn out right, without flopping in the middle. Now I know to heat up the pan then turn it down low enough to cook but not too low. On my gas burner it's about medium-to-low.
Anyway, now I have that mastered, these are a definite regular breakfast item for us!
Thanks so much!
