3-Ingredient Vegan GF Pancakes

Hi! Alberto here again. In case you didn't read the previous post, I'll put you in the picture: Iosune has got a cold and I'm in charge of publishing this week (she made the recipes, not me, so don't worry ?).

I didn't like the idea of writing, it's one thing I was never interested in (I prefer more graphical things like drawing or taking photos). However, I should admit I enjoy doing it now, I think I could get used to it ?. What about you, do you like writing?

Today's recipe is simple, no hassling and you will get an amazing outcome: pancakes! ? In addition, you only need 3 ingredients.

3-Ingredient Vegan GF Pancakes

All of the ingredients are pretty common, so you may already have them in your kitchen: banana, oats and oat milk. You only need to blend them and the batter will be ready.

3-Ingredient Vegan GF Pancakes batter

Now you only have to cook the pancakes.

3-Ingredient Vegan GF Pancakes

Quick healthy breakfast idea: make your pancakes the day before and re-heat it next morning, then top it with fruit and syrup.

3-Ingredient Vegan GF Pancakes

Tips:

  • If you haven't oat milk, you can use any other plant milk or water.
  • To save time, you can make big batches of pancakes and freeze them.
  • If you are in the mood of something savory, you can use this recipe too. Just use add some tomato slices, vegan Parmesan cheese and oregano for topping instead of fruit and syrup.

I just made these for my little boy, who isn’t the best with self-feeding so I’m trying to introduce more finger foods. He absolutely demolished almost an entire pancake! He looked like he was loving the taste, too 😄😄 I added cinnamon powder to the mix and topped with thinly spread peanut butter. Thank you!

I only seem to have porridge oats. Will that be OK? Also do you blend the oats dry or cooked already?

Hi Cece! You can use those of course. It is better to grind them dry. Have a nice day!

Hi B! I´ve never tried it. It should work. You can always make a test with a small quantity and if it is ok then go ahead. Have a nice day!

I just made this for breakfast from Thailand and it turned out pretty well. I have cooked normal pancake only once or twice in my life and it's never turned out well, my bad pan was one issue. Anyway from this time cooking, I got a better pan. I followed the instructions and got a good texture mixture. However I found out that the pancakes tended to easily fall apart, is it normal?
So I cooked until they were very brown and some got burnt a bit on the surface because I worried if it wouldn't be cooked enough and would fall apart. Do you have any suggestions on this? Thank you so much and I absolutely enjoyed the recipe!

Hi Yoo! No, my pancakes don't fall apart... Cook them longer at a lower temperature until golden brown. Have a nice day!
