I'd always wanted to learn how to dehydrate fruit but I'd never seem to have the time. However, recently I've decided to get my hands on it and I can't believe how easy it actually is! I'm really loving my new food dehydrator. It is so convenient!
Dried fruits are a super healthy snack, perfect to eat on the go and for when you're traveling. But I also love to add it to plenty of different desserts. I love that this homemade version is also preservative-free.
The best thing about my food dehydrator is that I can use it to dehydrate other ingredients, such as mushrooms, carrots, or green beans, making them suitable for long-term storage. And I find it way easier than using the oven... Truly a win-win!
How to dehydrate fruit
- If you don't peel it, wash and dry the fruit.
- Thinly slice fruit into slices (2 or 3 mm) using a knife or a mandoline.
- Place the fruit in a single layer onto the fruit dehydrator trays and dehydrate to 45ºC or 113ºF for about 6 hours.
- Use your dehydrated fruit immediately.
Pro tips
- Feel free to use any kind of fruits, like pears, lemons, or peaches. If you use different ones, let me know how it goes in the comments!
- If you don't want your dehydrated fruit to change color, you can add some lemon juice. Vitamin C will avoid oxidation.
- I suggest you use organic fruit to avoid wax and pesticides if possible.
- Keep in mind that thinner and smaller pieces will dehydrate faster, so please try to cut fruit accordingly.
How long does dehydrated fruit keep?
Keep your dry fruit in an airtight glass jar or container in a dark, cool place for 2 to 3 weeks.
How to use dehydrated fruit
Feel free to add your dehydrated fruit to all of your desserts or snacks, such as granola bars. I usually have it with coconut yogurt and it is absolutely out of this world!
On the other hand, you can also dip your fruit slices in melted vegan chocolate or vegan white chocolate. Dehydrated ingredients are extremely versatile and handy.

How To Dehydrate Fruit
Ingredients
- 2 bananas
- 4 kiwis
- 1 mango
- 2 red apples
- 8-10 strawberries
Instructions
- If you don't peel it, wash and dry the fruit.
- Cut the fruit into thin slices (2 or 3 mm) using a knife or a mandoline.
- Place the fruit into the fruit dehydrator trays in a single layer and dehydrate to 45ºC or 113ºF for about 6 hours. If you dehydrate the fruit to 65 ºC or 149ºF you can decrease the cooking time, although the fruit will lose some of its nutrients.
- Store your dehydrated fruit in a sealed container in a dark, cool place for 2 to 3 weeks.

Let the dehydrated fruit cool completely on a wire rack or a clean countertop.
Once cooled, store the dried fruit in airtight containers or vacuum-sealed bags to prevent moisture from getting in.

Hi Iosune, I'm just using a dehydrator for the first time. Your blog is really helpful. Can you tell me if it's more efficient to have the dehydrator always full when using or is it ok to just use 3 or 4 trays at a time? I have a 9 tray dehydrator.

Hi Andy,
It is more energy efficient to fill the dehydrator each go-round. If you have a solid machine there will not be any heating issues with one tray or 9. The thermostat and fan in the device take care of this - the former keeps heat constant, the latter provides even heat distribution (in a quality machine).

Hi, I wanted to know if I was to hydrate the fruits, and turn them into a powder would the powder go bad? I have been thinking of using fruit extract as a cosmetic colorant and don't know if the powder would go bad? Any suggestions?

Hmmm! I love dehydrated fruits a lot! Just like you pointed out, they are tasty. And when dehydrated well as directed above, they are very healthy.
It is definitely not the best to set the temperature to as high as 65 degrees Celsius as major nutrients will be lost
