Cut the fruit into thin slices (2 or 3 mm) using a knife or a mandoline.
Place the fruit into the fruit dehydrator trays in a single layer and dehydrate to 45ºC or 113ºF for about 6 hours. If you dehydrate the fruit to 65 ºC or 149ºF you can decrease the cooking time, although the fruit will lose some of its nutrients.
Store your dehydrated fruit in a sealed container in a dark, cool place for 2 to 3 weeks.

Feel free to use any kind of fruits, like pears, lemons, or peaches. If you use different ones, let me know in the comments!
If you don't want your dehydrated fruit to change color, you can add some lemon juice. Vitamin C will avoid oxidation.
I suggest you use organic fruit to avoid wax and pesticides if possible.
Keep in mind that thinner and smaller pieces will dehydrate faster, so please try to cut fruit accordingly.
Drying time will vary according to the size of the fruit slices.
