Hi! Alberto here again. In case you didn't read the previous post, I'll put you in the picture: Iosune has got a cold and I'm in charge of publishing this week (she made the recipes, not me, so don't worry ?).
I didn't like the idea of writing, it's one thing I was never interested in (I prefer more graphical things like drawing or taking photos). However, I should admit I enjoy doing it now, I think I could get used to it ?. What about you, do you like writing?
Today's recipe is simple, no hassling and you will get an amazing outcome: pancakes! ? In addition, you only need 3 ingredients.
All of the ingredients are pretty common, so you may already have them in your kitchen: banana, oats and oat milk. You only need to blend them and the batter will be ready.
Now you only have to cook the pancakes.
Quick healthy breakfast idea: make your pancakes the day before and re-heat it next morning, then top it with fruit and syrup.
Tips:
- If you haven't oat milk, you can use any other plant milk or water.
- To save time, you can make big batches of pancakes and freeze them.
- If you are in the mood of something savory, you can use this recipe too. Just use add some tomato slices, vegan Parmesan cheese and oregano for topping instead of fruit and syrup.

3-Ingredient Vegan GF Pancakes
Ingredients
- 1 banana
- 1 cup instant oats
- ¾ cup plant milk of your choice, we used oat milk
Instructions
- Grind the instant oats in a blender.
- Add the rest of the ingredients and blend until smooth.
- Place ¼ cup of the batter in a non-stick skillet (or a lightly greased skillet) and cook for about two minutes for each side.
- Serve with your favorite toppings.

I absolutely love this recipe! I'm currently in the middle of a Daniel fast, and decided to mix things up a bit and try something different... made these for breakfast this morning and they are amazing! I substituted the milk for water as the only milk we had in the house was cow's milk (which I can't have on the Daniel fast), and it worked so well with water! I topped the pancakes with kiwi to bring a slight bit of sweetness, but they were so delicious with or without fruit. I know what I'm going to be eating for the remainder of my fast, and beyond, even when my fast is over!! Absolutely lovely recipe, thank you!!

I was looking for a breakfast recipe I could use on the Daniel Fast. This one fit the need perfectly. The first time I made these exactly by the recipe. The second time I thought I was cutting the recipe in half and used 1/2 cup oats and 1/2 cup of oat milk. The batter was thinner and I think it came out best for me the second time. I used date honey (dates soaked in simmering water and put in blender and dash of cinnamon ) on top and they were great. I will be using this recipe even when the fast is over. You can eat the whole serving and never feel yucky . I am so happy I stumbled across this recipe.

Loves these. So healthy. I add a little water in a pot with some blueberries and cook until it turns into a syrup. Pour it over the pancakes, no sugar and all for me. YUM

I made these delicious pancakes. Thanks for the recipe! It's so easy and yummy! While looking at the Nutritional breakdown, I noticed that it says the calories for 1 pancake is 197 calories? So that would mean the calorie content for the 6 pancakes that this recipe makes, would equal almost 1200 calories? Am I misunderstanding this?

I just made this for breakfast from Thailand and it turned out pretty well. I have cooked normal pancake only once or twice in my life and it's never turned out well, my bad pan was one issue. Anyway from this time cooking, I got a better pan. I followed the instructions and got a good texture mixture. However I found out that the pancakes tended to easily fall apart, is it normal?
So I cooked until they were very brown and some got burnt a bit on the surface because I worried if it wouldn't be cooked enough and would fall apart. Do you have any suggestions on this? Thank you so much and I absolutely enjoyed the recipe!

Yummy, simple and healthy! I am not a great cook so I struggled with getting the pancakes to turn out right, without flopping in the middle. Now I know to heat up the pan then turn it down low enough to cook but not too low. On my gas burner it's about medium-to-low.
Anyway, now I have that mastered, these are a definite regular breakfast item for us!

Hi Liza! The skillet has to be hot and you should cook the pancakes over medium or medium-high heat until they're fully cooked and golden brown. Hope it helps!
