This sweet potato black bean chili is one of my favorite gluten-free recipes when I really want to enjoy a comforting dish. It is affordable, easy to prepare, and will surely keep you happy and satisfied.
Besides, it only requires 10 simple and easy-to-find ingredients and will provide you with plenty of nutrients. The best part is that it is ready in just 30 minutes!
How to make sweet potato black bean chili
- Heat the oil into a large pot and add the garlic and onion. Cook over medium-high heat for about 5-10 minutes.
- Incorporate the chili powder, cumin, and salt, stir, and cook for 1-2 more minutes.
- Add all the remaining ingredients, stir, and bring to a boil. Then cover and simmer for 20-30 minutes.
- Serve your sweet potato black bean chili immediately.
Ingredients and tips
- Extra virgin olive oil: I’m Spanish, so I use extra virgin olive oil to cook most of my dishes. However, any type of oil is okay. I always use extra virgin oils when possible because they’re healthier.
- Garlic cloves.
- Onion.
- Store-bought or Homemade Chili Powder: this chili recipe calls for traditional American chili powder, not cayenne. Cayenne and international chili powders are usually incredibly spicy. So if you live outside of the United States, please keep that in mind. If you can only find cayenne, add it to taste until the chili is okay for you, but not too spicy. You could also use chipotle powder, but please add it slowly and try your chili before adding more.
- Ground cumin.
- Salt: I used ionized salt, but any salt will do.
- Sweet potato: feel free to use any kind of sweet potato.
- Black beans: you could also use other types of beans if you want, such as pinto beans.
- Diced tomatoes.
- Vegetable stock or water: I prefer to use vegetable stock because it enhances the flavor of this dish. However, water is okay too. I'd suggest you make your own vegetable broth, but feel free to use it store-bought if you want.
- Serve it on its own or eat it with tortilla chips and vegan sour cream!

Ingredients
- 1-2 tablespoon extra virgin olive oil
- 4 cloves of garlic, sliced
- 1 onion, diced
- 1 tablespoon chili powder
- 1 tablespoon ground cumin
- 1 teaspoon salt
- 1 large sweet potato, peeled and diced
- 2 15-ounce cans black beans, drained and rinsed
- 1 28-ounce can diced tomatoes
- 2 cups vegetable stock or water
Instructions
- Heat the oil into a large pot and add the garlic and onion. Cook over medium-high heat for about 5-10 minutes or until golden brown, stirring occasionally.
- Incorporate the chili powder, cumin, and salt, stir, and cook for 1-2 more minutes, stirring frequently.
- Add all the remaining ingredients, stir, and bring to a boil, then cover and simmer for 20-30 minutes or until the sweet potatoes are soft.
- Serve your sweet potato black bean chili immediately with some tortilla chips and vegan sour cream.
- Keep the leftovers in an airtight container in the fridge for up to 1 week.
Notes
- This recipe calls for traditional American chili powder, not cayenne pepper. Cayenne and international chili powders are usually incredibly spicy. So if you live outside of the United States, please keep that in mind. If you can only find cayenne, add it to taste until the chili is okay for you, but not too spicy. - Omit the chili powder if you’re not into spicy food.
- Feel free to customize this sweet potato black bean chili with your favorite spices, veggies like pepper, or herbs like cilantro.
