This soup is perfect to boost your immune system and is also great if you’re already sick. The ingredients are awesome and have amazing health properties.
Ingredients
- 2 cloves of garlic
- 1/2 chopped onion
- 1/2 chopped leek
- 1/2 cup frozen peas (60 g)
- 1-inch piece of fresh ginger (about 2 cm)
- 1/2 head of broccoli, chopped. Discard the stem (180 g)
- 3 handfuls of fresh kale or spinach (60 g)
- 1 14-ounce can coconut milk (400 ml)
- 3 cups water or vegetable broth (750 ml)
- 1/8 tsp cayenne powder
- 1 tsp sea salt
- Ground black pepper to taste
- 4 tbsp nutritional yeast
- The juice of half a lemon
Instructions
- Place all the ingredients in a pot, except the nutritional yeast and the lemon juice.
- Bring the soup to a boil and then cook over medium-high heat for 10 minutes.
- Pour the soup into a blender, add the yeast and the juice and blend until smooth.
- Serve the soup in a bowl and add your favorite ingredients on top. We added pumpkin seeds, chia seeds and almond flakes. We usually eat this soup with pasta, we cook it according to package directions, serve the pasta in a bowl and pour the soup into the same bowl.

Just one little comment from me I keep wanting to share with you 🙂 You should use the stalks of the broccoli! They are as nutritious and tasty as the florets and it a great way to not waste a bit 🙂 In fact we eat them in slices as well when we steam broccoli but I’d understand you don’t like the roughness of it. I had a tickle in my throat and stuffy nose a couple of days ago and was worried I might be getting sick. I started looking up green soup recipes when I got home from work and decided to make this one. I had everything on hand except the leek, so I just omitted that. I used three or four huge handfuls of spinach/kale mixture because I wanted to up the greens. I added an extra cup of veggie broth since I added so many greens. It was super easy and fast to make! I stumbled on your beautiful recipe for boasting immune system. I like it and it makes sense but I would like to know the substitute for coconut milk as I am allergic to coconut and almond milk. Could I use rice milk instead. Or just water.

Wow! Immune boosting green soup is a great idea when it is cold outside. Know from my own experience that the immune system is weakened in winter. Eating this soup you won’t catch a cold. My wife has been craving something hot for some & comforting for some time now and so I decided to surprise her by making the soup.
It was easy and she loved it.
My wife is normally not a fan of smooth soups so I added cubes of cooked potatoes on the bottom and poured the soup over them. I highly recommend that addition if you do not mind the additional starch in your diet.
