If you don't like spicy food, omit the cayenne powder, although is so helpful if you want to remove mucus or you can't breath properly.

Anyways, the best way to be healthy is following a balanced diet all year long, although there are some magic foods that can help us, like this miraculous green soup!

Ingredients

  • 2 cloves of garlic
  • ½ chopped onion
  • ½ chopped leek
  • ½ cup frozen peas
  • 1-inch piece of fresh ginger
  • ½ head of broccoli, chopped. Discard the stem
  • 3 handfuls of fresh kale or spinach
  • 1 14-ounce can coconut milk
  • 3 cups water or vegetable broth
  • ⅛ teaspoon cayenne powder
  • 1 teaspoon sea salt
  • Ground black pepper to taste
  • 4 tablespoon nutritional yeast
  • The juice of half a lemon

Instructions

  • Place all the ingredients in a pot, except the nutritional yeast and the lemon juice.
  • Bring the soup to a boil and then cook over medium-high heat for 10 minutes.
  • Pour the soup into a blender, add the yeast and the juice and blend until smooth.
  • Serve the soup in a bowl and add your favorite ingredients on top. We added pumpkin seeds, chia seeds and almond flakes. We usually eat this soup with pasta, we cook it according to package directions, serve the pasta in a bowl and pour the soup into the same bowl.

The recipe seemed too simple and I was doubtful whether it would really be tasty. But as soon as I tasted, I wanted to write "Excellent" on the printed recipe and make it a regular in my diet. It's fantastic! Thank you!

I had a tickle in my throat and stuffy nose a couple of days ago and was worried I might be getting sick. I started looking up green soup recipes when I got home from work and decided to make this one. I had everything on hand except the leek, so I just omitted that. I used three or four huge handfuls of spinach/kale mixture because I wanted to up the greens. I added an extra cup of veggie broth since I added so many greens. It was super easy and fast to make! It was also really delicious and made a ton! I’ve been eating it for lunch the last two days, too. I’m not sure if the soup was part of the reason, but I did not get sick after all. I’ll save this recipe and use it a lot in the future. Thanks!

I stumbled on your beautiful recipe for boasting immune system. I like it and it makes sense but I would like to know the substitute for coconut milk as I am allergic to coconut and almond milk. Could I use rice milk instead. Or just water.

Wow! Immune boosting green soup is a great idea when it is cold outside. Know from my own experience that the immune system is weakened in winter. Eating this soup you won't catch a cold. At the same time, it is good for vegetarians, like me. Planning to cook this soup as soon as possible. Question: is it helpful for losing weight?

Hi Kseniya! It could be, as long as you're following a healthy diet 🙂

Made this soup for especially for my wife, she loved it and so did I, Fantastic flavour. The second time I made it I added some celery that needed using up, this didn't alter the flavour just added a little more texture. I found the nutritional yeast in Holland & Barrets only £2-99. I think this really helped the flavour

    Hey Iosune,

What does the yeast bring nutritionally, and what does it do to the taste?

    Thank you,
    Jenn

This is hands down my favourite soup ever! I find it especially good when I'm feeling under the weather or a bit low, or when I feel my diet hasn't been as good as it could have been. Also, it's delicious!

I love this soup! I made it twice, it’s great over pasta and rice.

Have you frozen it before? This is the only way I’ve used leeks and I want to use them all up, so I’ve thought about making 4 times as much and freezing the extras.
Thank you for this delicious recipe!
