These delicious zucchini noodles (or zoodles) with avocado sauce are ready in 10 minutes. Besides, this recipe requires just 7 ingredients to make.
I've tried so many diets and carbs weren't allowed in any of them. I could live with no fat or even without desserts and other sweet treats, but I couldn't live without carbs. That's why these diets didn't work for me. I lost 26 pounds or 12 kilos, but it was hard to keep the weight off. I'm following a high carb diet now and I'm so happy and healthy. If you eat healthy carbs like rice or potatoes, you don't have to be afraid to gain weight, just avoid refined carbs and excess fat in your diet.
I eat gluten-free pasta once or twice a week, but I'm in love with these zucchini noodles (or zoodles), they're so healthy and delicious. You can use other veggies like cucumber, carrot or pumpkin.
To make your zoodles more tasty, use your favorite pasta sauces, but try to choose healthy fats like avocados, nuts and seeds. Remove animal fats from your diet and also refined and hydrogenated oils.
This is a raw vegan recipe, so you won't find animal products or cooked food here. Many vitamins are water-soluble and a significant percent can be lost with cooking, so raw food is so healthy because is full of vitamins and minerals. Besides, raw food is really easy to prepare and many recipes are ready in less than 10 or 15 minutes!
To make the zucchini noodles I use a tool called Spiralizer, it transforms fruits and vegetables in just a few simple steps into spaghettis, spirals or slices. The noodles are ready in less than 5 minutes and the Spiralizer is really easy to clean, it's totally worth it!
Slice off one end of the zucchini so that you have a flat surface to place on the Spiralizer. Press the zucchini against the blade of the Spiralizer and crank the handle of the simple machine.
You only need 5 ingredients to make the creamy avocado sauce: water, lemon juice, avocado, pine nuts and basil. Feel free to use other nuts instead of the pine nuts (I love cashews and walnuts) or any leafy green instead of the basil (spinach also works).
Once you've made the zoodles and blend all the sauce ingredients in a blender, you just need to combine both and add some cherry tomatoes on top.
The kids love this super healthy pasta recipe! You can also add: vegan Parmesan cheese, nutritional yeast, sea salt, black pepper, other spices or herbs.

Made this today with spinach. It was my first raw meal (other than salad) and it was delicious!! I didn't read the comments about not making it ahead first. I was only having it for lunch and so have leftover sauce. Would you recommend storing it in the refrigerator?
Iosune says
Hi Janice! Yes, you should store the sauce in the fridge 🙂 I'm so glad you liked this recipe!
Kristina says
Have you ever tried yellow squash instead of zucchini for this recipe? Just curious before I give it a go (forgot to pick up zucchini today, but I have squash on hand. 😉
Iosune says
Hi Kristina! I'm so sorry, but I've never used it to make this recipe, although I think it could work. Have a nice day!
kim says
this recipe sounds delicious!! can I make I a day in advance or will it go bad? Thanks so much!
Iosune says
Hi Kim! I made this recipe in advance once and I dind't like it, the zucchini was soggy and the sauce so watery, but you can try if you want. Have a nice day!
Betsy says
Is there a way to make the sauce with something other than pine nuts? I don't have any on hand and absolutely dread making a trip back to the store. I have almonds. 🙂
Iosune says
Hi Betsy! Feel free to use any other nuts or seeds 🙂
Carolina says
Is the water used to cook the zucchini or to blend the avocados ?
Iosune says
Hi Carolina! The zucchini is raw, you don't have to cook it. The water is to make the avocado sauce 🙂
Toni says
Do you eat the zucchini raw?
Iosune says
Hi Toni! Yes, I love raw zucchini and is sooo healthy 😉
Gem says
Hi, would the advocado part work if made in advance. I am thinking of a packed lunch for work? Thanks ??
Iosune says
Hi Gem! I'd add the avocado just before serving... 😉
Jessi says
Where did you get your wooden fork from? I"ve been looking to get wood utensils instead of metal, but all I can seem to find is disposable bamboo rather than for daily use. I had one set that I received with this green friendly lunchbox type thing, but that was the only time I've come across it. Thanks and thanks for the recipe! This will be soo good this summer when I grow zucchinis and cherry heirlooms!! And extra happy it's raw too!
Iosune says
Hi Jessi! I bought it in Spain, so I can't help you, I'm so sorry! Thanks a lot for your comment!!!
Tori says
This recipe is delicious. I was wary about zoodles, but my first bite literally made me swear. So good. I added a little bit of honey and used cashews instead of pine nuts! Thanks for the recipe!
Iosune says

Genevieve says
Great recipes but that double negative in your opening left a disappointing taste.
Iosune says
Hi Genevieve! Excuse me, but what's the double negative you're talking about? Have a nice day!
Matt says
Hi,
I loved this recipe! I added some garlic because I couldn't resist and it was simply amazing.
Side note: the double negative the lady above is referring to is when you say, "weren't allowed in none of them". Should be any instead of none. Just thought you should know... Didn't see the point in being rude about it though?
Have an awesome day 🙂
Iosune says
Hi Matt! Thanks a lot for you help 🙂 English is not my first language and I didn't notice 😉 Have a nice week!
Jessica says
I can't believe anyone would try to correct your grammar. How rude! Your recipe looks great!
Iosune says
Thanks Jessica 😉
