Drunken noodles, also known as Pad Kee Mao, is a delicious and super comforting Thai recipe perfect to enjoy for dinner. Ready in 20 minutes!
These drunken noodles are out of this world! It is a delicious and cozy Thai recipe that is also known as Pad Kee Mao. The combination of flavors makes it an extremely rich dish perfect to enjoy for lunch or dinner.
Besides, it is very easy to prepare, because you just need to cook the veggies and the noodles and then add the sauce. This drunken noodles recipe is ready in just 20 minutes!
How to make drunken noodles
- Cook the rice noodles according to package directions. Drain and set aside.
- In the meantime, add all the sauce ingredients to a bowl and mix until well combined.
- Add the oil to a large skillet or wok and cook over high heat until it’s hot.
- Then add the garlic, green onions and Thai chilies and cook for about 1 minute.
- Add the broccoli florets and tofu, stir, and cook for 2 minutes.
- Incorporate the Thai basil and the baby corn, stir, and cook for 1 more minute.
- Finally, add the cooked noodles and the sauce, stir, and cook for 1 more minute until the sauce coats the noodles.
- Serve your drunken noodles immediately.
Ingredients and tips
- Wide dried rice noodles: for this Pad Kee Mao you can also use thinner rice noodles if you can't find wide ones.
- Soy sauce or tamari: to make my drunken noodles recipe I used soy sauce, but tamari is a good gluten-free alternative. If you can’t eat soy, coconut aminos is a great substitute.
- Vegan oyster sauce.
- Brown sugar: any type of sugar will do or even other sweeteners like maple syrup or agave syrup.
- Water.
- Oil: any type of neutral-flavored oil is okay. However, I like my drunken noodles better when I use canola oil.
- Garlic.
- Green onions.
- Thai chilies: omit this ingredient if you’re not into spicy food. If you can’t find them, just add any type of chilies you have on hand (you may need to adjust the amount of them though).
- Firm tofu: firm or extra firm tofu work best for this recipe. Soft or silken tofu are not good choices because they will fall apart easily. You can omit this ingredient or use any other kind of plant-based protein you have on hand, like tempeh or seitan.
- Broccoli florets.
- Thai basil: you can also use regular basil or omit this ingredient if you can’t find it.
- Canned baby corn.

Drunken Noodles
Ingredients
- 8 oz wide dried rice noodles
For the sauce:
- ¼ cup soy sauce or tamari
- ¼ cup vegan oyster sauce
- 1 tablespoon brown sugar
- 1 tablespoon water
For the stir fry:
- 2 tablespoon oil, I used canola oil
- 3 cloves of garlic, minced
- 3 green onions, chopped
- 2-3 Thai chilies, deseeded and finely chopped (optional)
- 4 oz firm tofu, cut into bite-sized pieces (optional)
- 2 cups broccoli florets
- 1 cup Thai basil, you can also use regular basil or omit this ingredient if you can’t find it
- ½ cup canned baby corn, drained, rinsed, and cut into vertical halves
Instructions
- Cook the rice noodles according to package directions. Drain and set aside.
- In the meantime, add all the sauce ingredients to a bowl and mix until well combined. Set aside.
- Add the oil to a large skillet or wok and cook over high heat until it’s hot.
- Then add the garlic, green onions, and Thai chilies and cook for about 1 minute, stirring frequently. Don't inhale, the chilies will make you cough.
- Add the broccoli florets and tofu, stir, and cook for 2 minutes, stirring frequently.
- Incorporate the Thai basil and the baby corn, stir, and cook for 1 more minute, stirring frequently.
- Finally, add the cooked noodles and the sauce, stir, and cook for 1 more minute until the sauce coats the noodles.
- Serve your drunken noodles immediately.
Notes
- Firm or extra firm tofu work best for this drunken noodles recipe. Soft or silken tofu are not good choices because they will fall apart easily. You can omit this ingredient or use any other kind of plant-based protein you have on hand, like tempeh or seitan.
- This Pad Kee Mao will also work with thinner rice noodles if you can't find wide ones.
- Feel free to make your drunken noodles with any type of neutral oil and sugar (or even with other sweeteners like maple syrup or agave syrup).
- Omit the Thai chilies if you’re not into spicy food. If you can’t find them, just add a different type of chilies (you may need to adjust the amount of them though).
- Feel free to customize your drunken noodles recipe by adding or using different veggies.
