Ingredients

  • 1 chopped onion
  • 2 cloves of garlic sliced
  • 1 chopped red bell pepper
  • 1 stick of celery
  • 2 chopped medium potatoes
  • 4 cups corn kernels
  • 3 cups water
  • 1 cup soy milk
  • 1 teaspoon sweet paprika
  • 2 tablespoon apple cider vinegar
  • 2 tablespoon nutritional yeast
  • 4 tablespoon tamari or soy sauce
  • Black pepper to taste

Instructions

  • Heat some water in a large pot and bring it to a boil, then add the veggies and the corn and cook over medium-high heat until they're cooked.
  • Add the rest of the ingredients, stir and cook another 5 minutes. Add more water if necessary.
  • Blend ⅓ of the soup in a blender. Add the mixture to the pot, stir and serve.
  • We added some fresh parsley, red bell pepper and celery on top.
