- 1 chopped onion
- 2 cloves of garlic sliced
- 1 chopped red bell pepper
- 1 stick of celery
- 2 chopped medium potatoes
- 4 cups corn kernels
- 3 cups water
- 1 cup soy milk
- 1 teaspoon sweet paprika
- 2 tablespoon apple cider vinegar
- 2 tablespoon nutritional yeast
- 4 tablespoon tamari or soy sauce
- Black pepper to taste
Heat some water in a large pot and bring it to a boil, then add the veggies and the corn and cook over medium-high heat until they're cooked.
Add the rest of the ingredients, stir and cook another 5 minutes. Add more water if necessary.
Blend ⅓ of the soup in a blender. Add the mixture to the pot, stir and serve.
We added some fresh parsley, red bell pepper and celery on top.
