These delicious zucchini noodles (or zoodles) with avocado sauce are ready in 10 minutes. Besides, this recipe requires just 7 ingredients to make.
I've tried so many diets and carbs weren't allowed in any of them. I could live with no fat or even without desserts and other sweet treats, but I couldn't live without carbs. That's why these diets didn't work for me. I lost 26 pounds or 12 kilos, but it was hard to keep the weight off. I'm following a high carb diet now and I'm so happy and healthy. If you eat healthy carbs like rice or potatoes, you don't have to be afraid to gain weight, just avoid refined carbs and excess fat in your diet.
I eat gluten-free pasta once or twice a week, but I'm in love with these zucchini noodles (or zoodles), they're so healthy and delicious. You can use other veggies like cucumber, carrot or pumpkin.
To make your zoodles more tasty, use your favorite pasta sauces, but try to choose healthy fats like avocados, nuts and seeds. Remove animal fats from your diet and also refined and hydrogenated oils.
This is a raw vegan recipe, so you won't find animal products or cooked food here. Many vitamins are water-soluble and a significant percent can be lost with cooking, so raw food is so healthy because is full of vitamins and minerals. Besides, raw food is really easy to prepare and many recipes are ready in less than 10 or 15 minutes!
To make the zucchini noodles I use a tool called Spiralizer, it transforms fruits and vegetables in just a few simple steps into spaghettis, spirals or slices. The noodles are ready in less than 5 minutes and the Spiralizer is really easy to clean, it's totally worth it!
Slice off one end of the zucchini so that you have a flat surface to place on the Spiralizer. Press the zucchini against the blade of the Spiralizer and crank the handle of the simple machine.
You only need 5 ingredients to make the creamy avocado sauce: water, lemon juice, avocado, pine nuts and basil. Feel free to use other nuts instead of the pine nuts (I love cashews and walnuts) or any leafy green instead of the basil (spinach also works).
Once you've made the zoodles and blend all the sauce ingredients in a blender, you just need to combine both and add some cherry tomatoes on top.
The kids love this super healthy pasta recipe! You can also add: vegan Parmesan cheese, nutritional yeast, sea salt, black pepper, other spices or herbs.

Hi Iosane, I just made this and it is soooooo yummy. Very light and not too rich like pesto with oil and Parmesan. Glad I found the recipe ๐
PS The first time I have ever commented on a recipe it was so nice thank you.
Iosune Robles says
Hi Gaye! Thanks for your kind comment ๐
Darlene says
Delicious! We used a large avocado and had to fix more noodles so it looked less like pistachio pudding with a little something in it. ๐
Iosune Robles says
Hi Darlene! Sounds good too ๐
Jessica says
This looks great. I have no lemons. Can I use limes instead?
Iosune Robles says
Hi Jessica! Maybe you can use apple vinegar ๐
Danielle says
Yummy! Needed some salt and pepper but otherwise the taste was delicious! It was a tad too much sauce for me so I saved some to use as a dip later.
Iosune Robles says
Hi Danielle! Thanks for your kind comment ๐
amy says
are the zoodles eaten raw or cooked?
Iosune Robles says
Hi! Feel free to eat it raw or cooked ๐
Christopher Medovich says
This was so delicious. I wish we could post the picture of the finished product. Yum!
Iosune Robles says
So glad you liked it, Christopher ๐ Have a nice day!
Selah Helas says
Tastes good! I peeled the zucchinin into thin slices and sauteed it for a quick minute. I also added some lightly sauteed mushrooms. For the sauce, I added about 1.5 tsp minced garlic some garlic and a bit of salt/pepper to taste. I used a little more lemon juice, too, because it was too thick to blend; I'll probably opt to just use water next time. Note that the avocado sauce yields about 2 cups and, at least IMHO, 2 Tbs was plenty to coat the single zucchini and tomatoes. So there's lots of avocado sauce left to coat other stuff. ๐
Iosune Robles says
So glad you liked our zucchini noodles Selah ๐ Have a nice day!
Sola says
Can I use dried basil? I'm not able to get fresh basil this time of year.
Iosune Robles says
Hi! Yes, feel free to use dried basil or any leafy green instead ๐ Hope you like it!
Marina Taboada says
Great receipe you go girl.
Iosune Robles says
Thank you! ๐
Willa Hope says
Can this be made in the morning and brought to work? Does the lemon juice keep it from turning brown?
Iosune says
Hi Willa! Yes, it can, but I think it's better freshly made ๐
Jenyve says
I made this for lunch today and it was so good. I replaced basil with spinach and pine nuts with pumpkin seeds. I've been struggling with getting creative with my raw meals and was in a routine of eating the same meals everyday so this was a nice change. This recipe will definitely be added to my rotation :).
Iosune says
Hi Jenyve! Sounds good ๐ So glad you enjoyed it!
Eleanor says
Tried it for lunch today. I've been trying to be keto for the last 4 weeks. I realised that I've been eating a lot of animal protein. Thank you for this recipe. It is very yummy. I am.going to get nutritional yeast next time I go shopping to see what that flavour is like. I enjoy the freshness from adding lime juice instead of lemon juice and the burst of juice from Roma tomatoes instead of cherry tomatoes. Thank you!
Iosune says
Hi Eleanor! You're so welcome ๐ So glad you liked it!
Elizabeth says
Would anything else make a good sauce for this other than avocado? Maybe cashews? Or soy yogurt?
Iosune says
Hi Elizabeth! I think any nut butter could work ๐
Richa Mittal says

Shea says
Hi! 1 1/4 cup basil seems like so much! I have a huge pile of basil leaves and am not even to 30g yet. Am I doing it wrong ?
Iosune says
Hi Shea! No, it's not. This is one of the most popular recipes on the blog and people love it ๐
Ryan Jeffrey says
Is there any way to make it without spiralizer?
Iosune says
Hi Ryan! Yes, you can also use a peeler ๐
Susan says
Just made this today and it's so tasty! I used 4 zucchinis, but only doubled the avocado blend (I did add a bit more water, but only because I thought it wouldn't be enough sauce for the 4 zucchinis -- but it turns out it was more than enough). I added these to the avocado sauce: salt, pepper, fresh garlic. And besides the tomatoes at the end, I also added sliced red onion. Thanks for a great and EASY recipe!
Iosune says
Hi Susan! Sounds great ๐ So glad you liked it!
lyndsay says

Can you please tell me the name of the slicing machine?
Iosune says
Hi William! It's called Spirali or Spiralizer ๐
Catherine says
This was my first attempt at a "raw food" recipe. It was interesting because I wasnt sure exactly how the sauce was supposed to taste. My husband said it tasted like tomatoes, which was odd since there was none in the sauce LOL. Once I put the whole thing together though, he said it was REALLY GOOD which I was not expecting. Will be adding this to my list of raw meals ๐
Iosune says
Hi Catherine! So glad you liked it ๐
Allison says
We used pepitas and walnuts since we didnโt have pine nuts. Also doubled the amount of zucchini (still very saucy). I think a little salt and pepper brought out the avocado flavor nicely. Really good!
Iosune says
Hi Allison! Sounds great ๐ So glad you liked it!
Tyshieha S Keitt says
This was delicious. I am new to raw food and it allows you to get the saucy feel and the spaghetti feel that you are not able to eat. I added salt, pepper, and paprika and it was good.
Iosune says
Hi Tyshieha! So glad you liked it ๐ Have a nice day!
Audrey says
This sounds delicious! Does the recipe call for fresh or dried basil? I don't know my way around the kitchen well enough to make an assumption.
Thanks in advance!
Iosune says
Hi Audrey! It's fresh basil ๐ Have a nice day!
Victoria says
Delicious! It needed some sea salt and cracked pepper, but what a lovely dish that's super easy and super healthy. Will definitely mark this as one of my favorites!
Iosune says
Hi Victoria! Thanks a lot, I'm so glad you liked it!
Kim says
So I'm assuming you eat this cold? Has anyone tried it warm?
Thanks ๐
Iosune says
Hi Kim! Yes, I eat this cold ๐
Jenn says
It sounds great. I'm going to stir fry the noodles, tomatoes and spinach then add the sauce to heat it. Hoping it'll turn out to be a nice hot meal.
Iosune says
Hi Jenn! Sounds amazing, hope it works!
Ammie says
I made this without the pine nuts, due to allergy. Super yummy!
Thank you.

Janice says
Made this today with spinach. It was my first raw meal (other than salad) and it was delicious!! I didn't read the comments about not making it ahead first. I was only having it for lunch and so have leftover sauce. Would you recommend storing it in the refrigerator?
Iosune says
Hi Janice! Yes, you should store the sauce in the fridge ๐ I'm so glad you liked this recipe!
Kristina says
Have you ever tried yellow squash instead of zucchini for this recipe? Just curious before I give it a go (forgot to pick up zucchini today, but I have squash on hand. ๐
Iosune says
Hi Kristina! I'm so sorry, but I've never used it to make this recipe, although I think it could work. Have a nice day!
kim says
this recipe sounds delicious!! can I make I a day in advance or will it go bad? Thanks so much!
Iosune says
Hi Kim! I made this recipe in advance once and I dind't like it, the zucchini was soggy and the sauce so watery, but you can try if you want. Have a nice day!
Betsy says
Is there a way to make the sauce with something other than pine nuts? I don't have any on hand and absolutely dread making a trip back to the store. I have almonds. ๐
Iosune says
Hi Betsy! Feel free to use any other nuts or seeds ๐
Carolina says
Is the water used to cook the zucchini or to blend the avocados ?
Iosune says
Hi Carolina! The zucchini is raw, you don't have to cook it. The water is to make the avocado sauce ๐
Toni says
Do you eat the zucchini raw?
Iosune says
Hi Toni! Yes, I love raw zucchini and is sooo healthy ๐
Gem says
Hi, would the advocado part work if made in advance. I am thinking of a packed lunch for work? Thanks ??
Iosune says
Hi Gem! I'd add the avocado just before serving... ๐
Jessi says
Where did you get your wooden fork from? I"ve been looking to get wood utensils instead of metal, but all I can seem to find is disposable bamboo rather than for daily use. I had one set that I received with this green friendly lunchbox type thing, but that was the only time I've come across it. Thanks and thanks for the recipe! This will be soo good this summer when I grow zucchinis and cherry heirlooms!! And extra happy it's raw too!
Iosune says
Hi Jessi! I bought it in Spain, so I can't help you, I'm so sorry! Thanks a lot for your comment!!!
Tori says
This recipe is delicious. I was wary about zoodles, but my first bite literally made me swear. So good. I added a little bit of honey and used cashews instead of pine nuts! Thanks for the recipe!
Iosune says
Hi Tori! I'm so glad you liked it! You're so welcome and thank you for making the recipe ๐
Genevieve says
Great recipes but that double negative in your opening left a disappointing taste.
Iosune says
Hi Genevieve! Excuse me, but what's the double negative you're talking about? Have a nice day!
Matt says
Hi,
I loved this recipe! I added some garlic because I couldn't resist and it was simply amazing.
Side note: the double negative the lady above is referring to is when you say, "weren't allowed in none of them". Should be any instead of none. Just thought you should know... Didn't see the point in being rude about it though?
Have an awesome day ๐
Iosune says
Hi Matt! Thanks a lot for you help ๐ English is not my first language and I didn't notice ๐ Have a nice week!
Jessica says
I can't believe anyone would try to correct your grammar. How rude! Your recipe looks great!
Iosune says
Thanks Jessica ๐
