Ingredients

  • ¼ cup extra virgin olive oil
  • ½ medium onion diced
  • 2 cloves garlic minced
  • 16 ounces mushrooms sliced, I used cremini mushrooms
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ¼ cup all-purpose flour
  • 3 cups vegetable stock

Instructions

  • Heat oil in a large skillet over medium-high heat. Sauté the onion until it's soft and lightly browned, for about 3-4 minutes.
  • Add garlic and mushrooms, stir, and sauté until they become soft and golden brown, for about 8-10 minutes.
  • Add the flour and cook over medium heat for 1-2 minutes, stirring frequently.
  • Gradually whisk in the vegetable stock until the mixture is smooth without any lumps.
  • Add the spices (thyme, salt, and pepper) and give it a good stir.
  • Bring the mixture to a boil, then reduce the heat to medium and continue cooking for approximately 5 minutes or until it thickens, making sure to whisk frequently.

Notes

  • Mushroom Mastery: Take your time sautéing the mushrooms until they turn golden brown. This step enhances their rich, umami flavor, elevating your gravy.
  • Customized Consistency: Adjust the amount of liquid and simmering time. Longer simmering yields a thicker consistency, while shorter simmering results in a thinner one.
  • Adjusting Thickness: If your gravy becomes too thick, simply whisk in a bit more stock until it reaches your desired consistency. Taste and adjust the seasoning as needed.
  • Correcting Thin Gravy: If your gravy is too thin, make a roux with 1 tablespoon of oil and 1 tablespoon of flour in a skillet. Whisk it into the gravy until it thickens.
  • Straining for Smoothness: For a silky-smooth texture, strain the gravy through a fine-mesh sieve or cheesecloth. This step removes any remaining lumps or herb bits.
