    I'm in pizza heaven. I can't believe these Pizza Zucchini boats are vegan, it's unbelievable! My diet is quite simple, I usually cook easy dishes with simple ingredients, but I was dying to try some vegan foods, such as cheese or chorizo, and they are awesome!

    This recipe is really simple, you need zucchini, tomato sauce, cheese, chorizo, vegan Parmesan and oregano, easy peasy! Zucchini, tomato sauce and oregano are so easy to get. If you can't find vegan cheese and chorizo, you can use this creamy vegan cheese, it's super easy to make and the ingredients are really easy to find in any supermarket. You can also use dry tomatoes instead of the chorizo, or even cherry tomatoes.

    You can make your own vegan Parmesan, you can find the recipe in our vegan zucchini pizza bites post, it's so delicious, you only need a blender or food processor and a few simple ingredients to make it and it can last a long time at room temperature.

    This chorizo is not gluten-free, but you can find gluten-free alternatives made with soy (I think it is called soyrizo). You can substitute it for vegan gluten-free sausages or veggies, there are so many options!

    I was vegetarian for the last 6 months and now I'm vegan since a few days (and I'm so happy!). I hardly ever eat meat substitutes because I don't miss the taste of meat, but you can make a lot of interesting recipes with these products. Chorizo is typical Spanish product, so I've eaten it maaaaany times in my life and I can say this vegan chorizo tastes amazing! It's healthier and it's easier to digest (traditional chorizo is so indigestible).

    I have to admit it's not difficult to be vegan, you can replace eggs, honey and dairy products so easily and the recipes even tastes better (not always, but most of the times). We've used Tofutti cheese slices and oh my god, it's awesome! I'm not going to eat vegan cheese every day, but it's a great product to make gorgeous recipes like pizza.

    To make these vegan pizza boats you only need to cut each zucchini into halves through the length, add tomato sauce, place the vegan cheese slices, the vegan chorizo and bake them for 15 or 20 minutes. You can add oregano and vegan Parmesan later. You can't wait to eat these babies!

    Ingredients

    • 3 zucchinis
    • 6 tablespoon tomato sauce
    • 1.5 ounces vegan chorizo, 42 slices
    • 6 vegan cheese slices, Tofutti
    • Oregano and vegan Parmesan to taste
    Prevent your screen from going dark

    Instructions

    • Preheat the oven at 355 º F or 180 º C.
    • Cut each zucchini into halves through the length.
    • Add 1 tablespoon of tomato sauce, a vegan cheese slice (cut in halves) and 7 slices of vegan chorizo on each pizza boat.
    • Bake them for 15 or 20 minutes.
    • Add oregano and vegan Parmesan to taste.
