Vegan Mexican style potatoes with chorizo, homemade enchilada sauce and homemade sour cream. A delicious recipe, really easy to make. You’re gonna love it!

  1. Preheat the oven at 430 F or 220 º C.
  2. Peel the potatoes and cut them into cubes.
  3. Place the potatoes on a baking sheet with a little bit of oil and sea salt to taste. Bake them for 40 minutes.
  4. Heat the oil in a pan and cook the chorizo (finely chopped) until golden brown.
  5. Serve the potatoes with the enchilada sauce, the chorizo and the sour cream on top. You can add minced chives too.
