I think it’s impossible I don’t like any potato recipe. I eat potatoes very often, especially baked or steamed because they’re lighter and healthier and I don’t add any oil. On a daily basis, I prefer to eat potatoes with low fat sauces, but sometimes I prefer something special. Chorizo is from Spain, but I’ve used our homemade enchilada sauce and also our homemade sour cream, which are Mexican sauces, that’s why I’ve called this recipe Mexican style potatoes with chorizo.
My diet is quite simple and I don’t usually eat any meat substitute, only when I go to a restaurant or when I make a recipe for the blog. I bought a pair of chorizos a few months ago, I used one to make these vegan zucchini pizza boats and the other one to make this recipe. This chorizo is awesome, I couldn’t notice any difference with the traditional one and is much healthier.
The recipe is really easy to make, you only need to bake the potatoes, fry the chorizo with a little bit of oil and make the sauces, that’s all. You don’t need to use both sauces, but your potatoes will taste better if you do.
If you’re looking for a simpler enchilada sauce recipe you can also use tomato sauce and add some spices, although this homemade sauce is really easy and it’s totally worth it. In addition, you can make extra sauce and make these delicious vegan sweet potato and black bean enchiladas.
This amazing chorizo is not gluten-free, but if you’re a celiac or you’re following a gluten-free diet you can also use soyrizo or even remove it. This chorizo tastes really good and I love to eat it with bread, I can’t believe it’s not really chorizo! In addition, it has much less fat and is also cruelty-free.
As you can see, you can bake the potatoes with no oil and they are really delectable, but you can add oil if you want, although I think it’s not necessary, especially if you eat them with some sauce.
The homemade sour sauce is ready in only 2 minutes, you only need to place all the ingredients in a blender and blend blend blend. It’s vegan and low in fat.

Vegan Mexican style potatoes with chorizo, homemade enchilada sauce and homemade sour cream. A delicious recipe, really easy to make. You’re gonna love it!
Ingredients
- 3 medium potatoes
- 1 tsp extra virgin olive oil
- 1 cup vegan chorizo (180 grams)
- 1 cup homemade enchilada sauce (250 grams)
- Homemade sour cream
- Chives (optional)
Instructions
- Preheat the oven at 430 F or 220 º C.
- Peel the potatoes and cut them into cubes.
- Place the potatoes on a baking sheet with a little bit of oil and sea salt to taste. Bake them for 40 minutes.
- Heat the oil in a pan and cook the chorizo (finely chopped) until golden brown.
- Serve the potatoes with the enchilada sauce, the chorizo and the sour cream on top. You can add minced chives too.
I don’t many meat substitutes either usually, but they are nice on occasion and especially useful for feeding to people who are less used to full-on veganism! I’m pretty sure we do have that particular brand of chorizo in the UK, I’ll have to track it down. Love your site!
