Peel and chop the potatoes and steam them for 15 to 20 minutes or until they’re soft.
Place them in a large mixing bowl and wait until they’re cold enough you can touch them.
Add the rest of the ingredients except the flour and the spring garlics and stir with a spoon.
Add the flour and mix well. Add the chopped spring garlics and mix again. Use your hands if necessary.
Preheat the waffle maker. Once the waffle maker is ready, you can generously coat with non-stick spray or some oil (extra virgin olive oil and coconut oil are my favorite ones). We didn’t do this, but it’s up to you.
Add the batter into the waffle maker and cook according to manufacturer’s instructions. My waffles were ready in 7 minutes.
Serve with your favorite sauce on top. We added some ketchup.
