These vegan gluten free potato waffles are delicious, satisfying and so convenient. You can make big batches of these beauties and then freeze them.

  • 1 pound peeled potatoes (450 g)
  • 1/2 cup soy milk (125 ml)
  • 4 tbsp nutritional yeast
  • 2 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp sea salt
  • Black pepper to taste
  • 1 cup buckwheat flour (140 g)
  • 2 small spring garlics, chopped (optional)

  1. Peel and chop the potatoes and steam them for 15 to 20 minutes or until they’re soft.
  2. Place them in a large mixing bowl and wait until they’re cold enough you can touch them.
  3. Add the rest of the ingredients except the flour and the spring garlics and stir with a spoon.
  4. Add the flour and mix well. Add the chopped spring garlics and mix again. Use your hands if necessary.
  5. Preheat the waffle maker. Once the waffle maker is ready, you can generously coat with non-stick spray or some oil (extra virgin olive oil and coconut oil are my favorite ones). We didn’t do this, but it’s up to you.
  6. Add the batter into the waffle maker and cook according to manufacturer’s instructions. My waffles were ready in 7 minutes.
  7. Serve with your favorite sauce on top. We added some ketchup.
