Look at this simple vegan detox soup! I love it because it tastes amazing, is so beautiful and it can help you to clean and detoxify your gorgeous body.

Ingredients

  • 1/2 pound pumpkin (225 g)
  • 2 red onions
  • 1/2 yellow bell pepper
  • 1/4 head of broccoli (discard the stem)
  • 2 celery sticks
  • 10 cherry tomatoes
  • 4 cups boiling water (1 l)
  • 4 tbsp soy sauce or tamari
  • 1 tsp ginger powder
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp herbes de Provence
  • 2 tbsp nutritional yeast
  • Lemon juice to taste

Instructions

  1. Spiralize the pumpkin or chopped it finely with a knife. You can also use a peeler.
  2. Chop the rest of the veggies and place them with the pumpkin in a large pot. Add the water, soy sauce, spices (ginger, garlic and onion powder) and the herbs.
  3. Cook over medium-high heat for 5 to 10 minutes.
  4. When the soup is ready, add the nutritional yeast and the lemon juice just before serving, stir and enjoy!
