Rainbow Salad with Low Fat Raw Vegan Dressing

To make this low fat raw vegan rainbow salad you only need a blender, a knife, a cutting board and a bowl. It’s ready in less than 15 minutes!

Ingredients

Salad:

  • 2 cups spinach (60 grams)
  • 6 cherry tomatoes
  • 1 carrot
  • ½ yellow pepper
  • ½ avocado
  • ¼ red onion
  • ¼ cup blueberries (35 grams)

Dressing:

  • 2 tomatoes
  • ¼ onion
  • 3 leaves of basil

Instructions

  1. Place the spinach and the rest of the ingredients (chopped) in a bowl.
  2. To make the dressing you only have to place the 3 ingredients in a blender and blend until smooth.
  3. Pour the dressing over the salad.
