These oil-free pancakes are vegan an also gluten-free. Best healthy pancakes ever!

Ingredients

  • 1/2 cup oat flour (60 g)
  • 1/2 cup buckwheat flour (70 g)
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 3/4 cup oat milk (185 ml)
  • 1 banana
  • 1 tbsp almond butter
  • 1 tbsp maple syrup
  • Toppings: blueberry jam and fresh figs

Instructions

  1. Mix dry ingredients in a bowl (oat flour, buckwheat flour, baking powder and cinnamon).
  2. Place the rest of the ingredients in a blender and blend until smooth.
  3. Combine dry and wet ingredients in a bowl and stir with a spoon.
  4. Place ΒΌ cup of batter in a non-stick skillet (or a lightly greased skillet) and cook for about two minutes for each side.
  5. Serve with your favorite toppings.
