I used to count calories, but not any more! I prefer to eat healthy and nutritious foods because they're good for my body and I feel amazing since I'm vegan.
Since I read The Starch Solution I'm trying to consume less oil and when I do, I only use extra virgin olive oil or coconut oil. There are so many alternatives, like nut butters, they're super healthy and taste even better!
These pancakes are similar to my vegan gluten-free pancakes, but I made some changes. For example, they are made with almond butter instead of extra virgin olive oil. Best healthy pancakes ever!
Tips:
- You can use other flour, sweetener, plant milk or nut butter. You should take a look at our guide to gluten-free flours. If you use different ingredients, maybe you'll have to add more or less.
- Sometimes I freeze the pancakes and I defrost them at room temperature and reheat them in a skillet.
- To make oat flour you just have to grind oats with a grinder, a blender or a food processor.

Oil Free Pancakes (Vegan + Gluten Free)
Ingredients
- ½ cup oat flour
- ½ cup buckwheat flour
- 1 teaspoon baking powder
- ½ teaspoon ground cinnamon
- ¾ cup oat milk
- 1 banana
- 1 tablespoon almond butter
- 1 tablespoon maple syrup
- Toppings: blueberry jam and fresh figs
Instructions
- Mix dry ingredients in a bowl (oat flour, buckwheat flour, baking powder and cinnamon).
- Place the rest of the ingredients in a blender and blend until smooth.
- Combine dry and wet ingredients in a bowl and stir with a spoon.
- Place ¼ cup of batter in a non-stick skillet (or a lightly greased skillet) and cook for about two minutes for each side.
- Serve with your favorite toppings.

Could there be a sub for the banana, tbsp of mashed apple for example?... I just can't do bananas! I know, vegan blasphemy.
