  1. Peel the potatoes and cut them into 1 inch cubes (2.5 cm).
  2. Steam them for about 15 or 20 minutes or until soft. You can also boil them if you want. Let them cool down completely at room temperature.
  3. Peel and cut the oranges into cubes as well.
  4. Finely chop the onion.
  5. Cut the nori sheet. I used scissors, but a knife is also okay.
  6. Place all the ingredients in a mixing bowl and add the olives, salt and dressing. Mix until well combined.
  7. Add some chopped fresh parsley on top (optional).
  8. I prefer to eat this salad cold, so I leave it for at least one hour in the fridge, but it’s up to you.
  9. Keep it in a sealed container in the fridge for 3 or 4 days.
